The Wine Room was founded by Bruce Simberg in Winter Park, Florida in 2006 — not as a fine dining concept, but as something the American dining scene was missing: a place where any guest could explore the world's greatest wines without committing to a bottle, without needing a sommelier's vocabulary, and without the pressure that usually comes with a serious wine list.
The idea was elegantly simple. Put 180+ wines on tap using state-of-the-art preservation machines, serve them in three pour sizes — a one-ounce taste, a half glass, a full pour — and let guests discover what they love at their own pace.
That original Winter Park location has earned the Wine Spectator Best of Award of Excellence 13 years in a row. When the concept came to Delray Beach in 2019 — to a storied 8,000-square-foot space on Atlantic Avenue — it brought everything the original location had built, but went even further.

Twenty-six Enomatic preservation machines line the floor, each holding wines at the perfect serving temperature — protecting every open bottle so the last pour is as good as the first. The result is a live, rotating selection of 180+ wines available by the glass, every day.
The Enomatic system works by sealing each bottle with an inert gas after every pour, preventing oxidation and keeping every wine fresh for weeks. It's the same technology used by the world's top wine programs — and it's what makes tasting 180+ wines by the glass not just possible, but exceptional.

The Wine Room's cheese and charcuterie program was designed and developed by Max McCalman — the first Maître Fromager in a North American restaurant, honored by the Guilde Internationale des Fromagers. His book on artisan cheese won the 2006 James Beard Award for Best Reference Book. McCalman curates our fromage cave and leads monthly wine and cheese pairing events at the Delray Beach location.

A fromage cave on Atlantic Avenue.
Most wine bars offer cheese as an afterthought. Ours is curated by the first Maître Fromager in North American restaurant history. Max McCalman designed our entire program — the fromage cave, the named flights, the pairings — to do exactly what the wines do: take guests somewhere they've never been.
From a sharp Zamorano with a Rioja to Délice de Bourgogne alongside a glass of Champagne, every selection on our board has a wine match in mind. Cheeses sourced from England, France, Belgium, Spain, Italy, Holland, Australia, and across the U.S. Named flights include the Truffle Palooza, Vive La France, Taste of Iberia, and Max's Flight.
The building has always had a story.
The space at 411 E Atlantic Avenue was built in 1925 by architect Samuel Ogren. It housed the Arcade Tap Room — a Prohibition-era institution where polo players, cartoonists, and rumrunners drank alongside guests including Franklin D. Roosevelt, Gary Cooper, and Gloria Swanson. The building has never quite lost that energy.
Today, through a door beyond the cellar, that history lives on as Radcliffe's Speakeasy. A separate bar with its own identity: low ceilings, velvet, candlelight, and a cocktail program built with the same obsessive precision as the wine wall. Ten original cocktails, a house barrel-pick bourbon, and a room that rewards those who find it.
